Serena's Rosemary Sweet Potato Quiche

"Probably the best recipe I’ve invented so far is Rosemary Sweet Potato Quiche. This is from memory, so there are a lot of approximations with the measurements. But feel free to play around to suit your tastes!"

Ingredient List

  • 3 large sweet potatoes
  • 2 T rosemary, divided
  • 8-12 eggs, depending on size
  • Splash of milk
  • 1 large onion
  • 2oz log of goat cheese
  • 1 pre-made pie crust


  • Preheat oven to 400
  • Chop the onion into thick slices
  • Peel and dice sweet potatoes, and toss them with olive oil, salt, pepper, and 1 T rosemary.
  • Roast them for about 20-30 minutes or until starting to crisp, add the onions about halfway through the roasting

Crack and beat the eggs and the milk in a large bowl. Add the remaining rosemary and some more salt and pepper.

Reduce oven heat to 350
Spray a 9 inch pie pan or casserole dish and roll the pie crust onto it. Prick with a fork and blind bake for about 10 minutes or until it starts to brown.

Mix sweet potatoes and onions into eggs, pour everything into the blind baked pie crust.
Crumble goat cheese on top of the egg mixture

Bake the quiche  at 350 for about 45 minutes. ***I have used many different ovens over the years and they can vary widely, so definitely check after about 30 minutes!
