I’ve always had a bit of a waffle obsession, and ever since my sister in law got me a waffle iron this past Christmas, it’s been my go-to, super easy, weekend treat (and sometimes midweek too when there’s enough batter left over..)!
- 2 eggs
- 2 cups all-purpose flour
- 1 ¾ cups milk
- ½ cup vegetable oil (olive oil works too if you like the taste)
- 1 tbsp white sugar
- 4 tsps baking powder
- ¼ tsp salt
- ½ tsp vanilla extract
Preheat waffle iron. Beat eggs in large bowl with hand beater until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt, and vanilla, just until smooth.
Spray preheated waffle iron with non-stick cooking spray. Pour mix on to hot waffle iron. Cook until golden brown. Serve hot. *a fave topping is honey and cinnamon and/or homemade whipped cream if you want to be extra fancy.
